Drinking spirits has been part of civilised society for hundreds of years. up till the turn of the 19th century, people were drinking far more alcohol than we’d tolerate today. george washington enjoyed a drink or thirteen – one for each state. winston churchill was accused of being drunk on many occasions.
Without the spirit, we would not have cocktails. so drink up, have a tipple and ignore the conservatives who think we should all drink less.

NORTH AMERICAN RYE WHISKEY –
RYE REVOLUTION
Rye is known for imparting what many call a spicey or fruity flavor to the whiskey. Bourbon distilled from at least 51% corn, is noticeably sweeter, and tends to be fuller bodied than rye. As bourbon gained popularity beyond the southern United States, bartenders increasingly substituted it for rye in cocktails like Whiskey Sours, Manhattans, and Old Fashioneds, which were initially made only with rye. All other things being equal, the character of the cocktail will be drier with rye.

OLD POTRERO 18TH CENTURY AMERICAN RYE

Recommended on Ice with an orange peel. ld Potrero is a re-creation of an 18th century Ameri- can whiskey. It’s made with 100% rye mash. Most rye makers mix corn and/or barley in the mash, which would make the spirit sweeter. It’s cop- per-pot distilled and aged for two years plus in toasted oak barrels. The reason they don’t call it a “rye whiskey” on the label despite the fact that it has a much higher rye content than other American whiskeys is that U.S. standards require the oak to be charred in order to give a whiskey that designation. Old Potrero 18th Century Style Whiskey is aged in traditional handmade un- charred oak barrels. Traditional barrel making in- volves heating the staves over a fire of oak chips to help the cooper bend them, lightly toasting— but not charring—the staves in the process. Con- tinuing the heat until the barrels burst into flames and become charred is a later innovation

OLD POTRERO STRAIGHT RYE

Recommended on Ice. Old Potrero Straight Rye Whiskey is a part of our endeavor to re-create the original whiskey of America. This release was distilled in a small copper pot still at our distillery on San Francisco's Potrero Hill, from a mash of 100% rye malt. Rye was the grain of choice for America's first distillers, and using a mash of 100% rye malt produces a uniquely American whiskey.
This straight rye whiskey was aged in new handmade charred oak barrels. In traditional barrel making, the cooper heats the staves over a fire of oak chips, allowing them to be bent and formed into a barrel. During this process, the inside of the barrel becomes lightly toasted. By the early 19th century, coopers had learned that if they allowed the heat to continue, the inside of the barrel would burst into flames and become charred. At Anchor, we have found that handmade oak barrels–charred in this traditional manner–impart a rich color and unique character to our rye whiskey.
